孤高の食中酒とは、料理を引き立てながら飲むたびに口とのどをリフレッシュし、無意識のうちに杯が進んでいくお酒。それには何が必要か。ただ甘いだけでは杯は続きません。かなめになるのは上質な酸味であると考えます。

What Hakugakusen is aiming for is “the ultimate sake to accompany meals” that adheres in quality to the pure rice sakes made of rice produced in Fukui Prefecture, which is highly suitable for brewing. The ultimate sake to accompany meals is a sake that refreshes the mouth and throat when drunk while enhancing the food. It is the kind of sake that you end up drinking more than you planned to. What qualities produce this effect? Sweetness alone is probably not enough. Actually, a refined sourness is thought to be the key.

口に含むと爽やかな
香りが通り抜け、
アルコールを感じさせず
フェードアウトしていく。

そしてピチピチと躍る香り高い酸味がほんのり印象に残る。すなわち「躍る酸」。白岳仙の粋ともいえる至高の味覚です。

When imbibed, a refreshing fragrance permeates the mouth and fades out without any noticeable alcohol effects, and to round it out, the taster is left with a highly fragrant sourness ‘dancing’ in the mouth. This subtle mix of flavours and effects may be the essence of Hakugakusen.
